The one she told me to make every single time I said I was going to take a swing at a new recipe. So mom, like in every other aspect of life, you were right. Moist, rich, and just the right amount of banana- it does not get any better than this.
What you'll need:
-1 cup sugar
-1/2 cup butter
-1/4 cup buttermilk
-1 cup mashed bananas
-1 tsp vanilla
-1 1/2 cup flour
-1 tsp baking soda
-1/4 cup sugar
-1/4 cup flour
-4 Tbs rolled oats
- 1 tsp cinnamon
What to do:
-Pre-heat your oven to 350 degrees.
-Throw your sugar and butter into your mixing bowl and whip them up.
-Once your sugar and butter is mixed, add in your eggs one at a time and continue mixing on medium/high until they're light and fluffy.
-Next with your mixer on low add in the bananas, buttermilk, and vanilla and stir until evenly combined.
-After that add in your flour and baking soda, and mix until completely combined.
-Transfer your batter into either lined cupcake tins or a greased loaf pan, then add the topping if you'd like to!
-If you are making muffins bake them for 12-15 minutes, and if you are making a loaf bake it for 30-45 minutes, or until you can insert a toothpick into the middle and no batter comes off onto it.
