Funfetti White Chocolate Chip Cookies

Hello there!
Does 'funfetti' anything make you just incredibly happy? It cannot just be me. Anything full of rainbow sprinkles just makes my day happier- and I think we could all use a little bit of that right now. So, let's get into it!

What You'll Need:
  • 1 cup salted butter
  • 2 cups white sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 3 cups flour
  • 1 tsp baking powder
  • 1 Tbs corn starch
  • 1 tsp salt
  • 2 cups white chocolate chips
  • 1 cup rainbow sprinkles 

What to do:
  1. Mix your cubed, cold butter with the sugars in your mixer on low until mixed. Then, beat on medium until it starts to become fluffy.
  2. Then add your eggs one at a time, beating on high until the mixture is incredibly light and fluffy (1-2 minutes).
  3. At this point go ahead and mix in your vanilla. If you really want that out-of-the-box funfetti flavor; use imitation vanilla extract. It will taste like good ole fashion funfetti from your childhood.
  4. If you are a sophisticated and organized person, mix all of your dry ingredients (flour, corn starch, salt, and baking soda) in a separate bowl then mix them in on low until fully combined. Alternatively just mix them into your mixture one at a time, beating thoroughly until completely mixed.
  5. Lastly, mix in your white chocolate chips and sprinkles on low.
  6. Next you're going to need a cookie scoop, and a tray lined with wax paper. Scoop out all of your cookies, then pop that bad boy in the freezer until they are rock solid. Do not bake them until they are completely frozen. This is what makes them so thick, chewy, and delicious!
  7. Once they are frozen, they are ready to be baked at 375 for 8-10 minutes!

You can also double the batch, freeze them, and keep them in a freezer bag for up to 6 months. I always have some of this cookie dough frozen on hand, so I can pop a few in the oven whenever!
