My Favorite Chocolate Chip Cookie Recipe

Hello there!
I know you have probably read dozens of posts about the best chocolate chip cookie recipe . I mean, no one thinks their cookie recipe sucks, you know? And if they are sharing it, surely they love it. So, here I am sharing my chocolate chip cookie recipe. If you love thick, fluffy, chewy, buttery, and rich cookies that look you just picked them up from your local bakery- this recipe is for you!

What You'll Need:
  • 1 cup salted butter, cold and cubed
  • 3/4 cup brown sugar
  • 1/2 cup white sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tsp maple extract
  • 1 cup cake flour
  • 1 3/4 regular flour
  • 1 tsp baking powder
  • 1 Tbs corn starch
  • 1 tsp salt
  • 2 cups chocolate chips

What to do:
  1. Mix your cubed, cold butter with the sugars in your mixer on low until mixed. Then, beat on medium until it starts to become fluffy.
  2. Then add your eggs one at a time, beating on high until the mixture is incredibly light and fluffy (1-2 minutes).
  3. At this point go ahead and mix in your extracts. Vanilla is required, and the maple is optional- but I highly recommend it. It gives the cookie a sort of rich, browned-butter taste without any of the work.
  4. If you are a sophisticated and organized person, mix all of your dry ingredients (flour, cake flour, corn starch, salt, and baking soda) in a separate bowl then mix them in on low until fully combined. Alternatively just mix them into your mixture one at a time, beating thoroughly until completely mixed.
  5. Lastly, mix in your chocolate chips. I typically do a mix of milk chocolate chips and mini semi-sweet chips, but whatever is either in your pantry or speaking to you will work.
  6. Next you're going to need a cookie scoop, and a tray lined with wax paper. Scoop out all of your cookies, then pop that bad boy in the freezer until they are rock solid. Do not bake them until they are completely frozen. This is what makes them so thick, chewy, and delicious!
  7. Once they are frozen, they are ready to be baked at 375 for 8-10 minutes!

You can also double the batch, freeze them, and keep them in a freezer bag for up to 6 months. I always have some of this cookie dough frozen on hand, so I can pop a few in the oven whenever! You can also leave out the chocolate chips, and add whatever else you might want to put in a cookie- mini pb cups, snickers, dried fruit, M&Ms... the options are endless!
til next time,
Emily
