Perfect Peanut Butter Chocolate Chip Cookies

Have you ever gotten in an argument over what the best kind of cookie is? Like soft, chewy, thick, crunchy, or crisp? I can relate to anyone who favors any one of those attributes, which is why I set out to make a cookie that was a little bit of each. After lots of trial, error, and peanut butter- I think I've created the universally perfect peanut butter chocolate chip cookie. (Yes I am aware that is a slightly specific sample size, but we have to take what we can get!) So, here it is folks!

What you'll need:
  • 1 egg
  • 3/4 cup of butter (cold)
  • 1 1/2 cups peanut butter
  • 1 1/4 cups brown sugar
  • 2 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1 1/2 cups flour
  • lots & lots of chocolate chips
  • (& if you're feeling fancy, some mini Reese's PB Cups. Because sometimes more IS more.)

What to do:
  • Start off by cutting up your cold butter and putting it into your mixing bowl with the peanut butter, and start whipping the two together- really show 'em who's in charge.
  • Next add your egg, brown sugar, and vanilla, and continue to beat the mixture until everything looks like a fluffy cloud of deliciousness.
  • Once your mixture is nice and fluffy slowly add in the flour and baking soda, as to not create the dreaded poof of flour (been there, done that, not a fun clean up).
  • Finally add in all of your chocolate. I added half a bag of milk chocolate chips, half a bag of mini semi-sweet chocolate chips, and some mini Reese's PB cups (because again, sometimes more IS more).
  • Now it's time to make some cookie mounds! I measure out about a tablespoon of cookie dough, roll it into a ball, and place it on a parchment lined cookie sheet.
  • Okay, this step is the hardest- let your rolled out cookies chill for 1 to 2 hours until they are really solid. This makes the cookies nice, thick, and chewy while holding that mound shape. (If you're impatient like me, throw them in the freezer for 20 or 30 minutes.)
  • After your cookies have been sufficiently chilled, preheat the oven to 350. Once the oven has come to temperature stick the cookies in for 10 to 15 minutes. Transfer the cookies from the tray to a cooling rack, and ta da! You've done it, congratulations on your new little pride and joys. Good luck not eating them all in one sitting!
