If you've gotten into a frosting rut, or are just looking for something cute to carry into the next summer cookout you attend: you've come to the right post! This frosting technique is easy peasy, doesn't require any frosting bags or tips, and turns out oh so cute.
The first step is getting your frosting on top so it looks like a scoop of ice cream! Use a cookie scoop, it'll give you that perfect little dome of frosting. I used a tablespoon cookie scoop, and plopped it on top of the cupcakes and it turned out just as I was hoping! No talent for decorating required!
Next is the chocolate drizzle! You could just buy some fudge topping from the store, but if you're feeling fancy like I was you can make some chocolate ganache! For my ganache I used 1/2 cup of heavy whipping cream, and brought it to a simmer over medium heat. Once heated I removed the pan from the heat, and added 1 cup of chocolate chips. Then you just mix until everything is smooth, and viola! You have ganache! Pop it in the fridge until it's cooled, and then you're ready to top your cupcakes!
To drizzle the chocolate on top of the cupcakes I scooped my ganache into a plastic bag, cut off the tip, and drizzled until I got my desired effect. Alternatively if you wanted a more authentically messy look, you could always drizzle the ganache on top of your cupcakes with a spoon! The only really important thing is that your ganache is completely cooled, or else it'll melt your buttercream- and that would not be cute!
Lastly I just sprinkled some rainbow jimmies on top and topped it with a little pink sixlet and called it a day! You could always top them with other sundae toppings like peanuts and cherries: whatever floats your boat!
