White Chocolate Raspberry Blondies

Hey guys!

I am pretty sure my mom is convinced I created this recipe for the sole purpose of ruining her diet, but I swear did it out of love! While I know people who favor white chocolate to real chocolate are few and far between, I know they are out there. And my mom is most definitely one of those people. I wanted something as simple and easy as a brownie that could be just be thrown in the oven, with that same fudgy consistency- but without the traditional chocolate flavor profile. And after some trial and error, the white chocolate raspberry blondie was born. Rich, sweet, chewy white chocolate juxtaposed with the tartness of raspberries is a match made in diet-hell. So if you're looking to work on your winter sweater bod, keep on reading!

What you'll need:
-1/2 cup butter (1 stick), room temperature
-1 cup sugar
-2 eggs
-2 1/2 cups flour
-8 oz of white baking chocolate (not chocolate chips), melted & cooled
-1 cup white chocolate chips
-1/2 cup frozen raspberries

What to do:
-Preheat your oven to 325 degrees
-Start off by putting your butter, sugar, and eggs in a bowl and whipping them together with a standing mixer on medium speed for 2 to 3 minutes, until everything is nice and fluffy.
-Next, pour in your cooled, melted white chocolate and mix until it is evenly combined with everything else.
-Now it's time to add your flour! Add in your flour 1/2 cup at a time, with your standing mixer on low until it's all mixed in.
​-Once everything is all mixed up, go ahead and dump in about 1 cup of chocolate chips, because sometimes more is more.
-Dump your delicious mixture into a greased 9inch by 9inch pan, spread it evenly, then sprinkle the frozen raspberries on top.
-Throw that baby in the oven for 30-40 minutes, until the top is barely golden brown.
-Once it's out of the oven, try to practice some self control and let it cool for 20 to 30 minutes until it is cooled so it's easier to cut. Or pop it in the freezer for 15 minutes, or did into it with a spoon as soon as it's out of the oven- I'm not here to judge.

Who knew that getting your winter bod could be soooo easy?
